Peanut butter and oat biscuits


I can't get enough of these biscuits. The original recipe used brown sugar so I swapped this for honey which gives them more of a gooey but fluffy texture. Make sure you check the sugar and salt content on the peanut butter you are using otherwise this can up the calories on your cookies! I am lucky enough to have a good friend who lives near a health food store that makes 100% pure peanut butter upon order, no junk, for cheap as chips and I got her to purchase me a big tub just the other day. Before this I used Sanitarium's Peanut butter which is low in sugar and salt. These biscuits are a great snack to reach for when you are feeling peckish and are so easy to make...and even bigger bonus!


Ingredients

1/2 cup organic chunky peanut butter

1/2 cup honey
1 egg
1 1/4 cups gluten-free rolled oats
1/2 teaspoon baking soda



  1. Preheat oven to 180°C.
  2. In a small bowl,mix together the peanut butter and honey until fluffy. Beat in the egg.


  1. Add rolled oats and baking soda to creamed mixture, and mix well.

Line a baking tray with baking paper.

Roll dough into one-inch balls and place on tray allowing space for the biscuits to spread.

  1. Bake for eight minutes or until the biscuits turn slightly brown.
  2. Cool biscuits on a rack, and store leftovers in an airtight container.
