I love apple and I love coconut. The two combined together with a dash of cinnamon...that just set my tastebuds off! This is simple, delicious, Sunday baking at it's best and the smell of apple and cinnamon shot through our house in no time once they were in the oven- just bliss! These are going to be perfect to pop into my lunch bag for a recess snack during the week...if they manage to last that long!
Ingredients
2 cups almond flour
1 cup minced apple
1 tablespoon cinnamon
1 teaspoon baking soda
pinch of Himalayan sea salt
1 free range egg at room temperature
2 tablespoons raw organic honey, melted
Preheat oven to 190 degrees celsius
In a large bowl, combine almond flour, apple, shredded coconut, cinnamon, baking soda, and sea salt.
In a smaller bowl, mix the egg and honey until well blended
Add the wet ingredients to the dry and mix well
Knead the dough with your hands if necessary to ensure an even distribution of ingredients
Line a baking tray with baking paper
One at a time, form 2-3 inch size balls using a spoon to help, and place on tray a few centimetres apart.
Bake for 10-12 minutes or until golden brown and cooked through.
